I have been playing for a week now and have changed my game version twice. it seems to have changed again today. Does anyone know what the current version is? Is there a place we can find this info?

The quick changing is a bit unexpected and should certainly not happen this often in the future.
On March 1st, Taleworlds released v1.1.0.
BO kept running on the previous version until they were able to update it, which was v1.0.3.
Then today Taleworlds released v1.1.1 and BO watch patched to this today as well.
Little background aside, the current version is v1.1.1.14148.
